  • 2 skinless salmon fillets (6 oz each)
  • 4 cups romaine lettuce, chopped
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup Caesar dressing
  • 1 cup croutons
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Season salmon fillets with salt and pepper, then place on a parchment-lined baking sheet. Bake for 12-15 minutes or until flaky.
  2. While the salmon cooks, rinse and dry the romaine lettuce. In a bowl, whisk together lemon juice and Caesar dressing.
  3. In a large salad bowl, combine chopped romaine, croutons, and Parmesan cheese. Once cooked, flake the salmon into bite-sized pieces and add it to the salad.
  4. Drizzle the dressing over the salad ingredients and toss gently until everything is well coated.
  5. Serve immediately with additional Parmesan shavings if desired.
