  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons taco seasoning
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients: Dice the onion and mince the garlic.
  2. Sauté aromatics: Set your Instant Pot to 'Sauté' mode. Add a splash of oil and sauté the onion and garlic until fragrant and translucent (about 3-4 minutes).
  3. Add chicken: Place the chicken breasts in the pot, pour in the chicken broth, and sprinkle with taco seasoning. Stir gently.
  4. Cook under pressure: Seal the lid and set to 'Manual' mode for 15 minutes on high pressure.
  5. Release pressure: Allow for a natural pressure release for about 10 minutes before performing a quick release.
