- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 2 tablespoons taco seasoning
- Juice of 1 lime
Instructions
- Prepare your ingredients: Dice the onion and mince the garlic.
- Sauté aromatics: Set your Instant Pot to 'Sauté' mode. Add a splash of oil and sauté the onion and garlic until fragrant and translucent (about 3-4 minutes).
- Add chicken: Place the chicken breasts in the pot, pour in the chicken broth, and sprinkle with taco seasoning. Stir gently.
- Cook under pressure: Seal the lid and set to 'Manual' mode for 15 minutes on high pressure.
- Release pressure: Allow for a natural pressure release for about 10 minutes before performing a quick release.
