  • 1 lb boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Sauté chopped onions in oil over medium heat until translucent (about 5 minutes).
  3. In a bowl, mix ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, salt, and pepper until well combined.
  4. Form the mixture into a loaf shape in the prepared baking dish.
  5. In a small bowl, combine ketchup and brown sugar; spread on top of the meatloaf.
  6. Bake for 50-60 minutes or until the internal temperature reaches 165°F (75°C). Let rest for 10 minutes before slicing.
